Cincinnati Hospitality Veteran, Chef Team up on New Covington Restaurant

A name and design identity for the restaurant are currently being developed, but the concept will be unique to the area and blend traditional and contemporary culinary inspirations.

A new restaurant helmed by a Cincinnati hospitality veteran and the local chef behind several beloved Southern-style food concepts is coming to Covington.

Billy Grise, who most recently worked with Thunderdome Restaurant Group as its director of food and beverage, and Chef Mitch Arens, who has helped create concepts like Bayou Backyard, Beard & Bellies BBQ and Grub Local and is the founder and executive chef of Southernly, a local private chef company, are collaborating on the new restaurant. It’ll be located at 434 Madison Ave., near the former IRS site, which will soon be going under development to create apartments, townhomes and retail space. Grise and Arens say a name and design identity are currently being developed, but the concept will be unique to the area and blend traditional and contemporary culinary inspirations.

"It's been my lifelong dream to open my own restaurant," Grise said in a press release. "I'm thrilled to partner with friend and colleague Mitch Arens on this journey. There's a lot of exciting things happening that we're excited to share with the Greater Cincinnati food scene."

Grise and Arens have been longtime friends and colleagues, first meeting while working together 16 years ago at Nada, where Arens was the sous chef and Grise a line cook. The two say they spent hours dreaming up culinary concepts after work.

"This is a big deal,” Arens said in the release. “The two of us are finally coming together to create this concept. The restaurant is our story coming full circle, and we're excited for it to come to fruition. This is just one part of what we want to do long term."

Grise and Arens plan to open the restaurant this fall.
