Chef Gina Puopolo and her husband Matt opened the doors of their fresh new burrito operation in April and they’re excited with the results so far. At the Lime Taqueria (522 Main St., Covington, 859-360-7420), the couple uses natural ingredients — many grown in their own garden — to feed lunch and dinner guests, as well as late-night visitors to Covington’s Mainstrasse. Gina is a graduate of the Midwest Culinary Institute of Cincinnati and has a decade of experience in the local restaurant scene. (Anne Mitchell)
CityBeat: What’s the last great meal you ate and where did you eat it?
Gina Puopolo: For Mother’s Day, we went to Local 127 (on Fourth Street in downtown Cincinnati) and it was amazing.
Best meal I’ve had in a while. I loved it. I had Eggs Benedict on brioche, with sous vide lardoons and a nice hollandaise sauce. I could eat that for dinner! We started with the in-house smoked trout, and for dessert I had the cookies and cream with three different cookies and panna cotta, and I had a glass of champagne. We took my mother-in-law. My own mother, she was cooking for my restaurant — making tamales!
CB: What’s the hardest thing about starting a new restaurant?
GP: Knowing how big the crowds will be!
We’ve been super busy. It’s hard to know how many supplies to have on
hand. On Cinco de Mayo we had a line out the door!
