The Southern-sophisticated style and flavor of Sean Daly’s restaurant Hugo (3235 Madison Road, Oakley, 513-321-4846) stem from the time he spent in Charleston, S.C., attending Johnson & Wales University. “It was either there or Rhode Island, so I picked the one with the better beach,” he says.

Like most restaurateurs, Daly keeps busy. With Hugo finishing its fourth year in operation, he says a second restaurant with a different theme might soon be in the works.

He’s also getting married next summer and plans to have the ceremony outdoors at Hugo, which is where he met his fiancé.

CityBeat: What was the last great meal you had and where did you have it?
Sean Daly
: I’d say the last memorable meal I had was a Daveed’s. And I can’t quite claim what I had, but I’ve never had a bad meal there and they’re always changing it up and doing really cool stuff. Dave Cook and the staff up there are really on top of their game.

CB: I saw on Hugo’s Facebook page that you ran a special with octopus. What did you do with that?
SD
: We cooked it sous-vide to make it tender then we char-grilled it with local tomatoes, black olives, toasted bread and a tomato chili puree.

That Hugo think that he can cook when he always hired a chef de cuisine to run is kitchen.I think is sad when you have to look for recipe into cooking books because you dont know how to cook,GOOD LUCK!!! You can found a real chef at Boca(Joe Garcia)

nice grammar, as for the cook books thats just hilarious. and we do have sous chefs at hugo. because he is the chef owner. so its not just kitchen work. we only have 4 cooks not 12 so...... joe is not at boca anymore....... find something better to do with your time... from hugo staff
