Like most restaurateurs, Daly keeps busy. With Hugo finishing its fourth year in operation, he says a second restaurant with a different theme might soon be in the works
CityBeat: What was the last great meal you had and where did you have it?
Sean Daly: I’d say the last memorable meal I had was a Daveed’s. And I can’t quite claim what I had, but I’ve never had a bad meal there and they’re always changing it up and doing really cool stuff. Dave Cook and the staff up there are really on top of their game.
CB: I saw on Hugo’s Facebook page that you ran a special with octopus. What did you do with that?
SD: We cooked it sous-vide to make it tender then we char-grilled it with local tomatoes, black olives, toasted bread and a tomato chili puree.
