Like most restaurateurs, Daly keeps busy. With Hugo finishing its fourth year in operation, he says a second restaurant with a different theme might soon be in the works.
He’s also getting married next summer and plans to have the ceremony outdoors at Hugo, which is where he met his fiancé.
CityBeat: What was the last great meal you had and where did you have it?
Sean Daly: I’d say the last memorable meal I had was a Daveed’s. And I can’t quite claim what I had, but I’ve never had a bad meal there and they’re always changing it up and doing really cool stuff. Dave Cook and the staff up there are really on top of their game.
CB: I saw on Hugo’s Facebook page that you ran a special with octopus. What did you do with that?
SD: We cooked it sous-vide to make it tender then we char-grilled it with local tomatoes, black olives, toasted bread and a tomato chili puree.
