Pike Street Press is one of the hotspots in Covington's lively new arts district. Business is so good at the Press that Betsy Kuhr and her partner, Heidi Arnold, are planning to expand into the building next door. They've gutted the first floor and are getting ready to knock through the wall, just because "there's not enough room for everybody to sit!"
CityBeat: What's the last great meal you ate and where did you eat it?
Betsy Kuhr: Since we opened the business, we never get out to dinner. That's embarrassing! I have to say that the last great thing I ate was a pork butt we cooked in our Big Green Egg, a ceramic smoker. I made my own dry rub with onion powder, garlic powder, brown sugar, cayenne, Asian five-spice, Lawry's salt, black pepper and celery salt. We smoked the pork for five hours at 275 degrees, and it was incredible. We love the Egg!
CB: You live above your shop, too. What's the most exciting thing about the renaissance of Covington?
BK: The interest that people are taking in it! Heidi and I are amazed at the support of the city, the business community and the neighbors. It's so beautiful. There's a real urban feel and sense of community.
